A good wine will help digestion, bring out the flavors of the food and if it is a red wine, assist you in keeping your heart healthy.  There are many schools of thought as to what wines to combine with what foods.  However, the modern rule of thumb is that if it tastes right, it is right.  There are, indeed, some gourmands who may argue with this.  In any case, there would seem to be truly very little downside in combining food and wine in this manner.

Cooking With Wine

The art of cooking with wine is perhaps exhibited best in the French and Italian modes of cooking.  In both styles of cooking, combinations of food and wine include using reds in meat sources and bastes, and the use of sweet white whites in the preparation of certain deserts and vegetables.  This is a vast oversimplification, but in general wines add depth to flavor and can help in tenderizing certain meats and vegetables.  In most cases the combination of food and wine in this manner does not result in alcoholic tasting food as the cooking of the food typically boils away the alcohol or changes the way the alcohol itself is constituted.  Any age may eat this wonderful combination of food and wine.

Domaine Parent Corton Grand Cru Les Renardes 2001

Domaine Parent’s top red wine. Made from 40 year old vines with low yields. After hand harvest and a temperature controlled fermentation the wine matured for 20 months in oak casks.

Tasting Notes:

Intense, bright garnet-red colour. A dense nose with blackberry, forest mushrooms and herb aromas. Powerful and substantial with balanced fruit flavors and complexity. Long lngering finish. A great accompaniment to the finest meat and game dishes. Great now, but will continue to improve with 5 to 10 years ageing.

Boxed Wines

Have you ever tried a boxed wine.  This is a wine that is package in a bag with a protective box that holds the bag.  The bag is often aluminum and the box is typical corrugated cardboard.  At first glance some people will discount this as a “cheap wine”  However this packaging is arguably better than other means.

With box wines you get a safer transport mode.  It also preserves the wine better and keeps oxygen out which maintains a better flavor over time.  There is no cork taint or spoilage to worry about. 

Of course there are disadvantages to consider.  The hermetically sealed bag creates a situation where shelf life is much shorter than bottle wine after it has been opened.  Many connoisseurs say that the wine is not authentically aged to taste.
Just as there are advantages to the box wine however there are disadvantages as well, such as the fact that the bag used in this method is not hermetically sealed, and so because of this it has an unopened shelf life that is much shorter than most other types of wines. The box wines are also labeled by many wine connoisseurs as being ‘cheap’ wines, as they claim that the wine simply does not have the authentically aged taste and depth that other wines do.

In any event boxed wines are readily available and are gaining in popularity.

Port wine is a sweet Portuguese style wine that comes from the Douro Valley in the northern provinces of Portugal. This wine is actually often served as a dessert wine, and there are several imitations of port wine that have been reproduced around the world.

Port is produced from the grapes grown and processed in the Douro region, and it is then fortified with the addition of distilled grape spirits, in order to boost the alcohol content before the wine making process is fully complete.
